Soups: Cooking From Another Point of View
Description - We will work together in your home kitchen. You (or your group) will be the chef and I will guide you through the process of prepping for and creating a soup with garnish.
Soups allow us to really experience the process of building flavor from scratch. They give us a vivid snapshot into the most fundamental phases of this development. We will literally see, taste, touch, smell and hear it happen.
You will walk away from this experience with something consistent to rely on: a fundamental understanding of how and where to start building flavor. This is the starting point for any soup you choose to make (and many other things as well). The ingredients will vary greatly, but the structure will stay the same.
Cost - $180.00 for 3 hours and up to 3 participants. $65.00 for each additional hour. We require a $25 deposit to reserve your class.
Sauces: Cooking From Another Point of View

Learn How To Make Your Favorite Dish
Description - During this experience we will not only make your favorite dish together, but we will also create your ideal version of it. And in the process we’ll design a personalized recipe for you to follow in the future.
We'll get things started with a phone call to identify your taste preferences and the common threads that exist between them. This will allow us to design an experience that is specific to your tastes and create the right shopping list.

About Colin Barclay
Background
My name is Colin Barclay and I became intrigued by the cooking process at a very young age. I can still remember watching in awe as my uncle made Texas toast in a cast-iron pan. For those few minutes I forgot about the rest of the world. It was such an exciting thing to be a part of and still is to this day. Cooking really provides an amazing way to connect with others through a shared experience.
After finishing culinary school I had the fortune of working with several amazing chefs including one that held 3 Michelin stars. Between their tutelage and my own observations, I began to see some patterns that stayed the same even when the ingredients changed drastically. These consistencies create a structure that is very reliable. Once you begin to understand this structure, you will be Cooking From Another Point of View.
Cooking From Another Point of View
A recipe is a set of instructions for how to prepare a certain dish. Cooking From Another Point of View is essentially a recipe for making anything. This information is applicable to absolutely everything you will cook / create. There is always a structure that holds any recipe and or meal together. There is also a structure that holds taste together - it is the framework for everything else. Working from this level of understanding is a very powerful thing. You will start to answer your own questions while cooking, and your food will start to make sense in ways that the palate can easily understand. You become the structure that was previously provided by a recipe.
Cooking is often regarded as one of those things that you either have a knack for or you don’t; you are either born with it or you are not. Well I don’t agree, I think: “You either know how to taste, or you do not” is much more accurate, and this is where I come in. You can and will learn this if you really want to, and if you are one of those people who can manage to boil water backwards…you are in the right place.
